Greek Cushaw Pie

In this dish the squash combines with the mushrooms for a really
meaty texture. Cubed Lamb would be an excellent addition for
meat-eaters. With the Feta and Kalamata Olives this is a wholesome
and hearty dish with lots of spices and plenty of flavor.
It can be prepared like Spanakopita, putting the filling
between layers of philo or it can be prepared as a casserole.

2 Cushaws
1 large pkg fresh button mushrooms
1/3 C pitted Kalamata olives
2 T olive oil
1 can Italian diced tomatoes
2 cloves garlic diced
1/4 C fresh oregano chopped
1 T italian seasoning
8 oz feta cheese
Heat Cushaws in microwave for 5 minutes. Cool and peel.
Dice squash and add to diced mushrooms, garlic, tomatoes, oil and olives.
Cook over medium to low heat for 20- 30 minutes stirring occasionally.
Add oregano and herbs and put in a pyrex dish.
Top with feta and broil for 5-10 minutes till top is lightly brown.
